Roast Beef with Arugula and Pickled Onion

This recipe courtesy of Paleo Magazine is not only super easy, it is super delicious.


INGREDIENTS


2 tbsp

cider vinegar

1 tsp honey

1 dash of salt

¼ cup very thinly sliced red onion

16-inch cassava tortilla or other paleo friendly wrap

2 ounces thinly sliced reduced sodium cooked roast beef

1 tbsp coarse grain mustard

1 cup arugula


1. In a small bowl combine vinegar, honey, and salt. Stir in onion. Cover and chill overnight.


2. Spread tortilla with mustard and top with meat and arugula. Drain onion, discarding liquid. Spoon onion over arugula. Roll up tortilla around filling.
